Daube provençale



Make-ready time: 15 minutes 
Time of cooking: 60 minutes 
  
Ingredients (for 8 people):

2 kg of ox with thin stew standard chuck,galinette crossed approximately pieces 
1 onion 
1 carrot 
2 sheets of bay-tree 
2 cloves of garlic 
1 bunch of thyme 
pepper and salt 
a fine peeling of a large orange taken at least8 days before and quite dry 
300 G of stoned black olives 
2 spoonfuls with soup of coulis or thicktomato sauce 
2 spoonfuls with olive oil soup 
1 red wine bottle Côtes-duRhônewine (redpreferably Gigondas or Vacqueyras) 
  
Preparation of the recipe:


In a salad bowl, to put the meat, onion and carrot finely cut, peeled garlic, thyme and the bay-tree, the pepper and the zest of orange crossed. 

Pour the wine and let macerate from 12 to 24:00 with the expenses. 

The following day, drain the meat and make it return in jumping, very hot oil, piece after piece, deposit it in a pressure cooker. 

Then carry the marinade and its ingredients to boiling in the jumping one having been useful for the meat during 5 mn. 

Pour on the meat,  salt (but not too much because you will add olives at the end of the cooking), add the tomato sauce. 

Close the pressure cooker and  let cook 1:30 starting from the rotation of the valve which must turn at slow speed.


Let cool the casserole, open and add black olives and 2 spoonfuls with olive oil soup.

Discovery of the Lake Sainte-Croix


You want to spend some time between the Mediterranean see and the Alpes but you don’t know what to do ? Why not a peaceful day around the splendid lake Sainte-Croix ?  





This lake is one of the biggest natural lake of the south of France. It has an area of 2200 hectare. There are a lot of nautical activities that you can do in this place and the swim is always supervise during summer. Thanks to that you can enjoy your afternoon while your children are in the water. 
You can also do some activities with your whole family such as go for a ride in kayak or rent some bikes. 

You can also just enjoy this place and the beaches of the 3 villages around it (Sainte-Croix-du-Verdon, Bauduen ou Les Salles sur Verdon). Discover the lake is always a pleasure. 

At the North extremity of the lake you can also observe the bridge of Galetas where the canyon of Verdon beging. This can be the perfect place to have a lunch under the trees.

Let's talk about Fréjus !





Fréjus is the most big city of the region of the Var with a surface of 10500 ha (comparable to the city of Paris), lined in the West by "Massif des Maures" and in the northeast by "Massif d'Estrérel".

PARKS AND GARDEN
The Parc Areca, situated in edge of the sea at Saint-Aygulf, offers a space where get involved beauty and exoticism. You will discover surprising species of palm trees native of four places of the world, as well as a bamboo plantation and an oak grove.
The Parc Aurelien, afforested in the characteristic generous vegetation of the region, will allow you to discover vestiges of the Roman Aqueduct and the Villa Aurélienne, the magnificent house of palladian style.
The Garden de La Villa Marie, a magnificent formal frensh style garden, where you will find statues of classic style, a pond and an area of game The aisles of magnolias, palm trees and large cedars wille delight you!
The Garden du Clos de La Tour, the space of a big peace of mind near the center of Fréjus. You will discover vestiges of roman houses where was discovered the Hermes Bicéphale.

PONDS OF VILLEPEY
The ponds of Villepey form one of the rare littoral wet zones of the region and constitute a site particularly interesting for its flora, its fauna and its landscapes. This protected natural space was formed in the delta of Argens, by the ramblings of the river in the course of the centuries and by the human activities of extraction of sand. Currently property of the "Conservatoire du Littoral", this site is a place of conservation and discovery of the wealth and the fragility of our environment.
Every year, the city joins the " World Days of the Wet Zones " which take place traditionally the first weekend of February.

BEACHES
The beaches are extended on 8km between Saint Raphaël and Saint-Aygulf. On one of the largest wild beaches of var, a zone is reserved for the naturists, an other one authorized in the kept on a lead dogs, near the first-aid post of Argens. On 3,5 km between Saint-Aygulf and Issambres, creeks are lined by the path of the customs officers.

FORESTS
Half of the territory of Fréjus is covered with forests in Mediterranean essences. A lots of routes  allow to discover these wild spaces: hikes, equestrian, in mountain bike, on marked out paths.
Estérel, a massive in the ripped relief and in the big varieties of colors, is the witness of volcanic past.
The creation of biological reserves and refuges for animals allows to protect the faunistique wealth of the massif.

A FLORAL CITY : The Contest "Fréjus Fleuris"
Each year, the city of Fréjus is organizing this contest which makes the finest flowerings individual honor in three categories: Balcony or Window, Gardens, and Residences. The award of the 2015 contest will be held in the month of June in the gardens of Villa Aurelia.

A CITY OF ART AND HISTORY
Since 1987, Fréjus is a City of Art and History. This national label awarded by the Ministry of Culture and Communication emphasizes the implementation of a heritage valuation policy (archaeological, architectural, urban, landscape, immaterial) and awareness of architecture. 
This mission is supported by the Heritage Service of the City, in partnership with the Tourist Office and other cultural actors of the city. 
It is materialized by the care given to the knowledge and heritage conservation, with a rich and varied program for the public and a special mission given to young people and schoolchildren.

Fréjus, City of Art and History, offers the occasion of the 18th edition of the Spring poets, several appointments around the national theme "The great 20th - Century of poetry."

The Festival of Plants of Fréjus is an essential idea of release, with family or friends, for all ages! The Park of Villa Aurelia, the flower garden, are processed for 3 days in an extraordinary garden with over 70 exhibitors along the Roman aqueduct.
This event brings together nature lovers, individuals and professionals, goshawks various Mediterranean plants, tropical, fat, aromatic, perfume, bulbs, and much more! It is a true inspiration regarding decoration and external works. There are lots of tips and tricks!
- La Bravade
The bravado is a traditional folk festival celebrated in the streets of the historic center of the city, with the sound of fifes and drums, which takes place every year on the third Sunday after Easter.

Savon de Marseille

Savon de Marseille (or “Marseille Soap”) is one of the most well-known local products in Provence. You can’t miss the visit of a traditional fabric!


How did it appear?

Soap has always been used in France. Nevertheless, we know this particular soap was created from the Alep soap in Syria. Thanks to crusades in Spain and Italy, it came to the fabulous city of Marseille. From the 12th Century, fabrics appear. The main product they use to create the soap is… Olive oil, of course! Even the king Louis XIV was a big fan of this soap and made an edict to give rules for its fabrication. It helped to give it its really strong reputation and highlight all the Provençal know-how.

What is it used for?

From centuries, Savon de Marseille has been used for many things. It is a great face and hands cleaner, a fantastic domestic cleaner and can even wash linen. As it is moth proofer and bactericide, it helped child mortality to drop during the 19th Century.



The funny belief… It is said it helps not to get cramps if it is put at the bottom of the bed!

Its advantages

Savon de Marseille has so many qualities that make him really well-known.
-   It is hypoallergenic
-   It is biodegradable!
- Dermatologists recommend it to fight against skin’s dryness
- It is really economic: you don’t have to buy one per month!

What you WON’T find in a Savon de Marseille

       No perfume
       No colouring agent
       No addition
       No making adjuvant

In other words, … It is 100% Natural! However, beware of “Savon de Marseille-like” companies which claim to create it but add a lot of forbidden things in it!
In order to preserve its original identity, the UPSM was created: it is a professional association for the real Savon de Marseille.

On May 15th is the festival of the wines in Cassis. Appointement in the village for the exist of the new year, the Cassidens vine growers celebrate the AOC Casssis and 40 years of traditions.
